Isigny Ste Mere’s Abbaye St. Mere Cheese
Abbaye Ste Mere, also known as St. Paulin, is a traditional monasterystyle cheese. It is a semi-soft cheese, with distinctive aroma that is creamy & slightly salty (mild strength).
It has a smooth, dense texture and a golden yellow washed rind, and is perfect for melting.
The rind is periodically washed with brine during maturation, and the aging brings out fruity aromas and yogurtlike lactic flavors.
