Lamb chops have a distinctively rich and savory flavor. While they're fancy enough for a dinner party, it is incredibly easy and quick to prepare. Simply marinate them in rosemary, thyme and garlic, sear them quickly on the stovetop, and dinner is served.

Gently slice away top layer of fat from the rack (optional)
Coat the lamb with olive oil, rosemary, thyme, salt and pepper and rest for 5 minutes
Heat a grill pan over medium to high heat. Grill the lamb meaty-side down until the bottom is browned, 6–8 minutes. You may add garlic cloves and more rosemary to the pan for more flavor (optional)
Flip and cook until browned on the other side, for about 5 minutes
Cook, flipping the rack once more and adjust the cooking duration to how well-done you want your lamb to be
Set the lamb aside, and rest for 5-10 minutes before serving
